Prepare the Crust
- Preheat your oven to 350°F (175°C) and line an 8x8 baking pan with parchment paper. In a mixing bowl, beat together unsalted butter, brown sugar, salt, and all-purpose flour until crumbly. Press into the bottom of the pan and bake for 15 minutes.
Make the Filling
- In a medium saucepan, combine unsalted butter, brown sugar, honey, heavy cream, and salt. Cook over medium heat until simmering, about 2 minutes. Remove from heat, stir in vanilla extract and shredded coconut until smooth.
Assemble and Bake
- Pour the caramel coconut filling over the pre-baked crust, spreading it evenly. Bake for an additional 12 minutes until bubbly and slightly set.
Cool and Drizzle
- Allow the bars to cool completely in the pan on a wire rack. Meanwhile, melt chocolate chips until smooth.
Finish and Serve
- Drizzle melted chocolate over the bars and sprinkle flaky salt if desired. Allow to set before slicing into squares.

Notes
For optimal flavor, use high-quality butter and chocolate. Adjust sweetness by tasting the filling before pouring it onto the crust.
