Preparation Steps
  1. If using whole lobsters, chill them in the fridge for about 30 minutes. Remove the lobster meat from the shell and cut into ¾-inch chunks.
  2. In the mixing bowl, add mayonnaise, lemon juice, finely chopped celery, and chives to the lobster meat. Gently mix to coat the lobster.
  3. Season with salt and black pepper, adjusting to taste. Ensure the flavors are balanced.
  4. Cover the bowl and refrigerate for 30 to 60 minutes to allow flavors to meld.
  5. Serve in lettuce cups or on buttered rolls. Garnish with additional chives.
