  • 1 cup Light Brown Sugar
  • 1 large Egg
  • 1 cup All-Purpose Flour Use a gluten-free blend if needed.
  • 1 teaspoon Baking Powder
For the Toffee Sauce
  • 1 cup Heavy Cream Adds creaminess.
  • 1 cup Corn Syrup Prevents crystallization.
  • 1 teaspoon Kosher Salt
  • 2 tablespoons Bourbon (optional) Can be swapped with vanilla extract.

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Grease your baking dish lightly.
  2. In a medium bowl, combine chopped dates and baking soda. Pour boiling water over and let sit for 10 minutes.
  3. Cream together unsalted butter and light brown sugar until light and fluffy. Beat in egg and fold in date mixture.
  4. Sift together flour and baking powder. Gradually add to wet ingredients, mixing gently until just combined.
  5. Pour batter into prepared baking dish and bake for 30-35 minutes until a toothpick comes out clean.
  6. In a saucepan, combine butter, brown sugar, heavy cream, corn syrup, and kosher salt. Stir until smooth.
  7. Drizzle warm toffee sauce over the cooled pudding before serving.
