  • 1 medium head Garlic Roasted for sweetness.
  • 2 tablespoons Olive oil Extra virgin preferred.
  • 1 cup Ricotta cheese Can substitute with mascarpone or cottage cheese.
  • 1 cup Mozzarella cheese, shredded Can swap with provolone.
  • 1/2 cup Feta cheese, crumbled Can be replaced with goat cheese.
  • 1/4 cup Grated Parmesan cheese Omit for dairy-free option.
  • 1 teaspoon Dried oregano Fresh oregano can also be used.
  • 1/2 teaspoon Crushed red pepper flakes Optional, adjust according to spice preference.
  • 1 Fresh basil leaves For garnish.

Method
 

Step-by-Step Instructions
  1. Preheat oven to 400°F (200°C). Slice off tops of garlic head, drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft. Let cool.
  2. Heat a tablespoon of olive oil in a skillet over medium heat. Add fresh spinach, sauté for 2-3 minutes until wilted. Season with salt and pepper; set aside.
  3. Mash roasted garlic until smooth, mix in ricotta cheese, half of mozzarella, dried oregano, salt, and pepper until creamy.
  4. Spread ricotta mixture evenly over the pre-made pizza crust. Arrange sautéed spinach on top, then sprinkle remaining mozzarella and crumbled feta.
  5. Preheat oven to 475°F (245°C). Bake pizza on a pizza stone or baking sheet for 12-15 minutes until crust is golden and cheese is melted.
  6. Remove from oven, let cool for a couple of minutes, garnish with fresh basil, slice, and serve warm.
