Step-by-Step Instructions
  1. Preheat a large skillet or grill pan over medium heat for about 2-3 minutes.
  2. Combine chopped zucchini, red bell pepper, and red onion with olive oil, salt, pepper, and oregano in a bowl. Sauté for 3-4 minutes.
  3. Assemble quesadilla by placing one tortilla in the skillet and layering half of the mozzarella, sautéed veggies, sun-dried tomatoes, olives, and feta.
  4. Add remaining mozzarella and place a second tortilla on top. Press down with a spatula.
  5. Cook for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes.
  6. Remove from skillet, cool slightly, and slice into wedges. Serve warm.
