- Preheat a large skillet or grill pan over medium heat for about 2-3 minutes.
- Combine chopped zucchini, red bell pepper, and red onion with olive oil, salt, pepper, and oregano in a bowl. Sauté for 3-4 minutes.
- Assemble quesadilla by placing one tortilla in the skillet and layering half of the mozzarella, sautéed veggies, sun-dried tomatoes, olives, and feta.
- Add remaining mozzarella and place a second tortilla on top. Press down with a spatula.
- Cook for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes.
- Remove from skillet, cool slightly, and slice into wedges. Serve warm.
