- Press the tofu by wrapping it in several layers of paper towels, placing a heavy weight on top, and letting it press for about 15 minutes.
- Prepare your bell peppers, pineapple, and red onion by cutting the pineapple into 1-inch cubes and dicing the bell peppers and onion in similar-sized pieces.
- Once the tofu is pressed, cut it into 1-inch cubes and assemble the skewers by threading tofu, pineapple, bell peppers, red onion, and mushrooms onto metal skewers.
- Brush BBQ sauce generously on all sides of the assembled kebabs for flavor.
- Grill the kebabs on medium heat for about 10 minutes, turning halfway and brushing with additional BBQ sauce.
- Serve the grilled kebabs immediately, topped with freshly chopped parsley.
