Ingredients
  

For the Kebabs
  • 1 block extra-firm tofu can replace with tempeh for a different texture
  • 1 medium fresh pineapple use canned if fresh is unavailable, drain well
  • 1 medium orange bell pepper substitute can be any color bell pepper
  • 1 medium yellow bell pepper substitutes include any color bell pepper
  • 1 medium green bell pepper zucchini slices can be used as a substitute
  • 8 ounces package of mushrooms any firm mushroom, like cremini, works well
  • 1 medium red onion white onion or shallots are good substitutes
  • 1 cup vegan BBQ sauce ensure it’s vegan-friendly, homemade or store-bought
  • 2 tablespoons fresh parsley optional, cilantro can be used for a different taste

Method
 

Cooking Instructions
  1. Press the tofu by wrapping it in several layers of paper towels, placing a heavy weight on top, and letting it press for about 15 minutes.
  2. Prepare your bell peppers, pineapple, and red onion by cutting the pineapple into 1-inch cubes and dicing the bell peppers and onion in similar-sized pieces.
  3. Once the tofu is pressed, cut it into 1-inch cubes and assemble the skewers by threading tofu, pineapple, bell peppers, red onion, and mushrooms onto metal skewers.
  4. Brush BBQ sauce generously on all sides of the assembled kebabs for flavor.
  5. Grill the kebabs on medium heat for about 10 minutes, turning halfway and brushing with additional BBQ sauce.
  6. Serve the grilled kebabs immediately, topped with freshly chopped parsley.
