Cookie Preparation
- Preheat your oven to 350°F (175°C). Cream together the unsalted butter, honey, light brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes). Beat in eggs one at a time, then add vanilla extract.
- In a separate bowl, whisk together cornmeal, all-purpose flour, baking powder, cornstarch, and kosher salt. Gradually fold dry ingredients into the wet mixture until a thick dough forms.
- Portion dough into balls using a 1/4 cup measuring scoop and roll in extra cornmeal. Place on parchment-lined baking sheets, flatten slightly, and space about 2 inches apart.
- Bake for 11-14 minutes, until golden around the edges but slightly doughy in the center. Cool completely on baking sheets.
Frosting Preparation
- Beat together the softened unsalted butter, honey, powdered sugar, vanilla extract, and a pinch of kosher salt until smooth and creamy. Adjust consistency with milk if necessary.
- Spread honey butter frosting over cooled cookies. Drizzle with honey and sprinkle with flaky sea salt before serving.

Notes
For a unique twist, consider adding pecans or a hint of cinnamon to the frosting.
