  • 1/2 cup honey can substitute with maple syrup
  • 1 cup buttermilk can substitute with regular milk mixed with 1 tbsp lemon juice or vinegar
  • 2 large eggs

Method
 

Instructions

  3. In a separate bowl, whisk together melted butter, honey, buttermilk, and eggs until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 12-15 minutes until tops are golden and a toothpick comes out clean.
  7. Cool in the tin for 5 minutes, then transfer to a wire rack.
