A delicious and easy-to-make Honey Garlic Meatball Rice Bake that combines savory meatballs with rice and vegetables, topped with melted mozzarella cheese.

Ingredients
  

  • 1 pound ground beef or turkey
  • 1 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons chopped fresh parsley or 1 tablespoon dried
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon sesame oil optional
  • 1/2 teaspoon red pepper flakes optional
  • 1 cup shredded mozzarella cheese

Method
 

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine the ground meat, breadcrumbs, egg, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  4. In a separate bowl, whisk together the honey, soy sauce, ketchup, minced garlic, sesame oil, and red pepper flakes. Pour half of this sauce over the meatballs, reserving the other half for later.
  5. Bake the meatballs in the preheated oven for 20 minutes.
  6. While the meatballs are baking, combine the cooked rice and frozen mixed vegetables in a large baking dish.
  7. Once the meatballs are done, add them to the rice mixture and pour the reserved sauce over everything. Stir gently to combine.
  8. Sprinkle the shredded mozzarella cheese on top.
  9. Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  10. Let the dish cool for a few minutes before serving.
