Preheat your oven to 425°F (220°C).
In a large bowl, combine the sweet potato cubes, honey, olive oil, cinnamon, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through for even cooking.
Remove from the oven and let cool for a few minutes. If desired, sprinkle with chopped fresh parsley before serving.
