Ingredients
  

  • 2 large chicken breasts about 1 pound total
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup crumbled feta cheese
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F.
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  4. Once hot, add the chicken breasts and sear for about 5 minutes on each side until golden brown.
  5. While the chicken is cooking, mix together the crumbled feta cheese, honey, red pepper flakes, and lemon juice in a small bowl until well combined.
  6. Once the chicken is seared, remove the skillet from heat and spoon the honey-feta mixture evenly over the chicken breasts.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  8. Remove the skillet from the oven and let the chicken rest for 5 minutes.
  9. Garnish with chopped parsley before serving.
