Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and grease a loaf pan with butter or oil. Line with baking paper.
  2. In a large bowl, whisk together eggs, sugar, and oil until fluffy. Add mashed bananas, buttermilk, and vanilla. Mix well.
  3. In a separate bowl, sift flour, baking powder, and salt. Fold dry ingredients into wet ingredients gently.
  4. Fold in optional coconut and walnuts if desired. Combine everything until just incorporated.
  5. Pour batter into the loaf pan and smooth the top. Bake for 45-50 minutes until golden brown and a skewer comes out clean.
  6. For the syrup, combine brown sugar, butter, and cream in a pot over medium heat. Stir until bubbling and thick.
  7. Pierce the baked loaf several times and pour the hot butterscotch syrup generously over it.
  8. Cool in the pan for 15-20 minutes, then lift it out using the baking paper and slice.
