- Preheat your oven to 180°C (350°F) and grease a loaf pan with butter or oil. Line with baking paper.
- In a large bowl, whisk together eggs, sugar, and oil until fluffy. Add mashed bananas, buttermilk, and vanilla. Mix well.
- In a separate bowl, sift flour, baking powder, and salt. Fold dry ingredients into wet ingredients gently.
- Fold in optional coconut and walnuts if desired. Combine everything until just incorporated.
- Pour batter into the loaf pan and smooth the top. Bake for 45-50 minutes until golden brown and a skewer comes out clean.
- For the syrup, combine brown sugar, butter, and cream in a pot over medium heat. Stir until bubbling and thick.
- Pierce the baked loaf several times and pour the hot butterscotch syrup generously over it.
- Cool in the pan for 15-20 minutes, then lift it out using the baking paper and slice.
