  • 1 medium Onion Can substitute with shallots for a milder flavor
  • 2 cloves Garlic Fresh minced or powdered
  • 1 teaspoon Cumin Mix with coriander for extra flavor
  • 1 teaspoon Cinnamon Just a pinch elevates taste
  • 1 teaspoon Ginger Fresh or powdered for zing
  • 2 tablespoons Fresh Herbs (parsley, mint) Use dill as substitute if necessary
  • 4 tablespoons Butter or Oil Olive oil is a healthier option
For Serving
  • 1 cup Dipping Sauce (harissa or tahini) Enhances flavor with creamy or spicy kick

Equipment

  • Large skillet
  • Baking Sheet
  • Pastry Brush
  • Clean kitchen towel
  • cutting board

Method

Step-by-Step Instructions
  1. Heat a skillet over medium heat, add oil, sauté diced onions and minced garlic for about 5 minutes until translucent. Stir in ground chicken, cumin, cinnamon, and ginger until chicken is cooked through, around 5-7 minutes. Add fresh herbs, cool slightly.
  2. While the filling cools, preheat the oven to 375°F (190°C). Lay out a clean kitchen towel, cover phyllo pastry to keep it from drying out.
  3. Cut phyllo pastry into strips about 3 inches wide. Brush a strip with melted butter, layer another strip on top. Spoon filling onto one end, fold sides in, and fold into a triangle, sealing with butter.
  4. Place the briouats on a baking sheet lined with parchment, brush tops with butter. Bake for 20-25 minutes until golden brown and crispy.
  5. Remove briouats from the oven, cool for a few minutes, and serve warm with dipping sauces.
