- Preheat your oven to 325°F (163°C). Prepare a 9x9-inch square pan with nonstick spray and parchment paper.
- Mix Oreo crumbs and melted butter until combined. Press into the prepared pan and bake for 12 minutes. Let cool.
- Melt chocolate bars in short intervals in the microwave until smooth. Let cool slightly.
- Combine cream cheese, sugar, and cocoa powder in a bowl. Beat until smooth, about 2-3 minutes.
- Add in melted chocolate, heavy cream, and vanilla while mixing. Then add eggs one at a time, mixing only until combined.
- Pour the filling over the cooled crust and bake for 40-50 minutes until edges are set. Let cool gradually in the oven.
- Cool completely and then chill in the fridge for at least 6 hours.
- Prepare ganache by heating heavy cream and pouring over chocolate chips. Stir until smooth.
- Remove cheesecake from the pan, pour ganache on top, and refrigerate until set. Slice and serve.
