Step‑by‑Step Instructions
  1. Preheat your oven to 325°F (163°C). Prepare a 9x9-inch square pan with nonstick spray and parchment paper.
  2. Mix Oreo crumbs and melted butter until combined. Press into the prepared pan and bake for 12 minutes. Let cool.
  3. Melt chocolate bars in short intervals in the microwave until smooth. Let cool slightly.
  4. Combine cream cheese, sugar, and cocoa powder in a bowl. Beat until smooth, about 2-3 minutes.
  5. Add in melted chocolate, heavy cream, and vanilla while mixing. Then add eggs one at a time, mixing only until combined.
  6. Pour the filling over the cooled crust and bake for 40-50 minutes until edges are set. Let cool gradually in the oven.
  7. Cool completely and then chill in the fridge for at least 6 hours.
  8. Prepare ganache by heating heavy cream and pouring over chocolate chips. Stir until smooth.
  9. Remove cheesecake from the pan, pour ganache on top, and refrigerate until set. Slice and serve.
