Preparation
- Preheat the oven to 350°F (175°C) and line a 13x9 inch baking dish with parchment paper.
- Crush graham crackers and combine with granulated sugar and melted butter. Press into the baking dish.
- Beat cream cheese until smooth, then add sugar, eggs, and vanilla extract. Pour over the crust.
- In a saucepan over medium heat, mix brown sugar, corn syrup, heavy cream, and a pinch of salt until thickened.
- Stir in vanilla extract and pecans. Pour over the cheesecake layer.
- Bake for approximately 35 minutes. Allow to cool, then refrigerate for at least 4 hours.
