  • 2 cups Graham Crackers Crushed
  • 1/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter Melted
Cheesecake Layer
  • 16 ounces Cream Cheese Softened
  • 3 Large Eggs Room temperature
  • 1 teaspoon Pure Vanilla Extract
Pecan Topping
  • 1 cup Brown Sugar
  • 1/2 cup Light Corn Syrup
  • 1/2 cup Heavy Cream
  • 2 cups Pecans Chopped

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a 13x9 inch baking dish with parchment paper.
  2. Crush graham crackers and combine with granulated sugar and melted butter. Press into the baking dish.
  3. Beat cream cheese until smooth, then add sugar, eggs, and vanilla extract. Pour over the crust.
  4. In a saucepan over medium heat, mix brown sugar, corn syrup, heavy cream, and a pinch of salt until thickened.
  5. Stir in vanilla extract and pecans. Pour over the cheesecake layer.
  6. Bake for approximately 35 minutes. Allow to cool, then refrigerate for at least 4 hours.
