- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, beat together the softened unsalted butter, large eggs, and pistachio instant pudding mix until smooth and creamy.
- Gradually add the sugar cookie mix to the mixture, mixing until a sticky dough forms.
- Grease a 10 x 15-inch baking sheet and evenly press the dough into it.
- Bake for 18-22 minutes until the edges are lightly golden.
- Allow the cookie bars to cool completely before slicing into squares.
