  1. Start by patting your chuck roast dry with paper towels, then season with salt and black pepper.
  2. Heat a skillet over medium-high heat, add olive oil, and sear the roast on all sides for 2–3 minutes.
  3. Layer sliced onions, chopped carrots, and quartered gold potatoes in the slow cooker.
  4. Sprinkle minced garlic over the vegetables, then add dried thyme and place a bay leaf on top.
  5. Transfer the seared roast on top of the vegetables.
  6. Whisk together beef broth and Worcestershire sauce, then pour around the roast to avoid washing off the seasonings.
