- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add eggs one at a time, mixing well after each addition. Then add vanilla extract and blend for another minute.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients until just combined.
- Scoop tablespoon-sized portions of dough and roll into balls. Place on prepared baking sheets, leaving space for spreading.
- Press a small well into each cookie ball and fill it with about ½ teaspoon of strawberry jam.
- Bake in preheated oven for 12-15 minutes, until edges are golden brown and centers are soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
