Method

Step‑by‑Step Instructions
  1. Begin by peeling and roasting or sautéing garlic until fragrant and golden. Transfer to a bowl and set aside to cool.
  2. In a medium saucepan, add butter or olive oil over medium-low heat and melt or heat for 2-3 minutes.
  3. Add prepared garlic to the saucepan and sauté for 1-2 minutes until aromatic, stirring frequently.
  4. Whisk in heavy cream, milk, or plant-based milk into the saucepan, stirring continuously for a smooth consistency.
  5. Gradually stir in cheese if using, allowing it to melt into the mixture until thickened.
  6. Season with salt, black pepper, and nutmeg. Taste and adjust seasonings, adding herbs if desired.
  7. Optionally, use an immersion blender for an ultra-smooth sauce. Skip if you prefer a bit of texture.
  8. Adjust the sauce's thickness with a splash of milk if too thick, or simmer for a few more minutes to thicken.
  9. Spread the sauce over pizza dough or use as a dip, refrigerating leftovers in an airtight container.
