Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang.
  2. In a mixing bowl, combine crushed walnuts, almond flour, white sugar, and melted salted butter. Press this mixture into the bottom of the prepared baking dish.
  3. Beat together cream cheese, white sugar, and eggs until smooth. Reserve 1 ½ cups of this mixture in a separate bowl, then pour the rest over the walnut crust.
  4. Blend the reserved cheesecake mixture with pumpkin puree and pumpkin spice until smooth. Spoon over the white cheesecake layer.
  5. In another bowl, mix oats, flour, brown sugar, melted butter, and vanilla until crumbly. Sprinkle over the pumpkin layer.
  6. Bake for 60 to 70 minutes until golden, and the center is slightly jiggly. Cool in the dish for 15 minutes and chill in the fridge for at least 2 hours.
