Step-by-Step Instructions for Pumpkin Gooey Bars
- Preheat your oven to 350°F. Spray a 9x13 inch baking pan with nonstick cooking spray.
- In a mixing bowl, combine graham cracker crumbs with melted unsalted butter. Press this mixture into the bottom of the prepared baking pan.
- In another bowl, beat the cream cheese until smooth, then mix in pumpkin butter, brown sugar, eggs, vanilla, cinnamon, salt, and nutmeg.
- Pour the pumpkin filling over the crust and sprinkle dark chocolate chips on top.
- Bake for 20 minutes, then sprinkle flaked coconut and bake for another 20-30 minutes until the coconut is golden.
- Allow to cool completely for at least 2 hours before slicing into squares.
