- Preheat your oven to 375°F (190°C).
- In your baking dish, combine cubed zucchini, diced green bell pepper, chopped onion, and halved grape tomatoes.
- Sprinkle the vegetable mixture with the Italian herb blend and garlic powder, then mix in half of the mozzarella cheese, salt, and cracked black pepper. Drizzle with olive oil and toss until well coated.
- Bake uncovered for about 20 minutes.
- Remove the dish from the oven and sprinkle the remaining mozzarella cheese over the top.
- Return to the oven and bake for an additional 10 minutes.
- Let it cool for a couple of minutes and garnish with chopped parsley and red chili flakes before serving.
