Method
 

Steps
  1. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  2. In a large bowl, beat together butter and sugar until fluffy.
  3. Add pumpkin puree, egg, and vanilla to creamed mixture; mix until smooth.
  4. Gradually blend dry ingredients into wet ingredients until combined.
  5. Cover and chill dough for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoons of dough onto prepared sheets, leaving space in between.
  8. Bake for 10-12 minutes until edges are golden.
  9. Cool on sheets for 5 minutes then transfer to a wire rack.
  10. In a bowl, beat cream cheese and butter, then add powdered sugar and milk until smooth.
  11. Frost cooled cookies and top with sprinkles or nuts, if desired.
