Cooking Steps
- Boil a large pot of salted water, add wide noodles, and cook according to package instructions until al dente (8-10 minutes). Reserve a cup of pasta water, drain noodles, and set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add Italian turkey sausage, breaking it apart until browned (5-7 minutes). Transfer sausage to a plate, keeping drippings in skillet.
- Add chopped onions and bell peppers to the skillet. Sauté over medium heat until softened (5-6 minutes). Stir in minced garlic and a pinch of red pepper flakes, cooking for an additional 30 seconds.
- Pour in white grape juice, deglazing the skillet and scraping brown bits. Simmer for 2-3 minutes, then lower heat and add chicken broth, diced tomatoes, Italian seasoning, salt, and black pepper. Stir to combine.
- Return cooked sausage to the skillet, simmer for 8-10 minutes to thicken. Add reserved pasta, toss to combine, adjusting consistency with pasta water as needed. Stir in fresh basil.
- Serve the Italian Drunken Noodles in bowls, garnished with grated Parmesan and extra basil if desired. Enjoy!
