Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 cup fresh peaches diced
  • 1 medium jalapeño seeded and minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh cilantro chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine the diced peaches, minced jalapeño, honey, soy sauce, olive oil, minced garlic, ground ginger, salt, and black pepper. Mix well to create the marinade.
  3. Place the chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  4. Remove the chicken from the marinade and place it in a baking dish. Reserve the marinade for later use.
  5. Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  6. While the chicken is baking, pour the reserved marinade into a small saucepan and bring it to a boil over medium heat. Reduce the heat and let it simmer for about 5 minutes to thicken slightly.
  7. Once the chicken is done, drizzle the thickened marinade over the chicken and garnish with fresh cilantro before serving.
