Method
 

Step-By-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. In a skillet, heat olive oil over medium-high heat and sear the chicken for 3-4 minutes each side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, cook diced jalapenos and peach chunks for about 2-3 minutes.
  6. Whisk honey, apple cider vinegar, water, and cornstarch in a bowl until smooth.
  7. Pour the honey mixture over the jalapenos and peaches and simmer for 2-3 minutes.
  8. Return the chicken to the skillet, covering it with the sauce.
  9. Bake for 20-25 minutes or until the chicken reaches 165°F (74°C).
  10. Let rest for a few minutes before serving, drizzled with sauce.
