Step-by-Step Instructions for Japanese Carrot Ginger Dressing
  1. In a high-powered blender, combine 7 ounces of peeled and chopped carrots, 4 ounces of finely chopped onion, and 2 tablespoons of freshly chopped ginger. Add 1 tablespoon of granulated sugar, 1/4 cup of soy sauce, 1/2 cup of rice vinegar, and 1/2 teaspoon of salt. Blend on high for about 30 seconds until smooth.
  2. With the blender running, slowly drizzle in 3/4 cup of canola or vegetable oil until thick and well-combined, about 30 seconds.
  3. Taste and adjust seasoning if necessary, adding more salt or vinegar for desired flavor.
