  • 1.5 lbs chicken breasts or thighs maximum juiciness and protein
  • 2 medium zucchini cut into ½-inch slices
  • 3 bell peppers red, yellow, and/or orange, sliced into 1¼-inch chunks
  • 1 large red onion cut into 1¼-inch chunks

  • 1 tablespoon Dijon mustard no substitutions
Seasonings
  • 1.5 teaspoons onion powder
  • 1.5 teaspoons garlic powder
  • 1.5 teaspoons salt
  • 1 teaspoon dried basil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 0.5 teaspoons pepper
  • 0.5 teaspoons red pepper flakes optional

Step-by-Step Instructions
  1. Prepare Marinade: In a bowl, combine olive oil, soy sauce, balsamic vinegar, lemon juice, brown sugar, Dijon mustard, and seasonings. Whisk until well blended.
  2. Marinate Vegetables: Pour 3 tablespoons of the marinade over zucchini, bell peppers, and red onion. Toss and set aside for 30 minutes.
  3. Marinate Chicken: Place cubed chicken in a bowl. Cover with remaining marinade. Seal and refrigerate both chicken and vegetables for at least 4 hours.
  4. Soak Skewers: If using wooden skewers, soak them in water for 30 minutes before grilling.
  5. Thread Skewers: Alternate threading chicken and vegetables onto skewers, leaving space between pieces.
  6. Preheat Grill/Oven: Preheat your grill to medium-high or set the oven to 400°F (200°C).
  7. Cook Kabobs: Grill for 8-12 minutes or bake for 16-22 minutes, until chicken is 160°F and golden-brown.
  8. Rest and Serve: Allow kabobs to rest for 5 minutes before serving.
