Preparation
- Marinate the chicken by mixing olive oil, soy sauce, honey, minced garlic, smoked paprika, salt, and black pepper in a bowl. Toss chicken pieces in marinade and refrigerate for at least 30 minutes.
- Prepare the creamy garlic sauce by whisking together mayonnaise, Dijon mustard, crushed garlic, and lemon juice in another bowl. Chill in the refrigerator for at least 20 minutes.
- If using skewers, thread the marinated chicken onto them, leaving spaces in between for even cooking.
- Preheat the grill to medium-high heat (375°F/190°C). Lightly oil the grates to prevent sticking.
- Grill the chicken bites for about 4 to 5 minutes per side until golden-brown and cooked through, reaching an internal temperature of 165°F (75°C).
- Remove from the grill, let rest, and serve chicken bites with creamy garlic sauce drizzled or on the side. Garnish with fresh parsley.
