  • 1 lb Boneless, Skinless Chicken Thighs Cut into bite-sized pieces
  • 2 tbsp Olive Oil For marinating
  • 3 tbsp Soy Sauce Tamari or coconut aminos for gluten-free
  • 1 tbsp Honey For sweetness
  • 4 cloves Fresh Garlic Minced for marinade
  • 1 tbsp Smoked Paprika For smoky flavor
  • to taste Salt
  • to taste Black Pepper
For the Creamy Sauce
  • 1 cup Mayonnaise Base for the sauce
  • 1 tbsp Dijon Mustard
  • 1 tbsp Lemon Juice or Vinegar For acidity
  • 2 tbsp Fresh Parsley Chopped, for garnish

Method
 

Preparation
  1. Marinate the chicken by mixing olive oil, soy sauce, honey, minced garlic, smoked paprika, salt, and black pepper in a bowl. Toss chicken pieces in marinade and refrigerate for at least 30 minutes.
  2. Prepare the creamy garlic sauce by whisking together mayonnaise, Dijon mustard, crushed garlic, and lemon juice in another bowl. Chill in the refrigerator for at least 20 minutes.
  3. If using skewers, thread the marinated chicken onto them, leaving spaces in between for even cooking.
  4. Preheat the grill to medium-high heat (375°F/190°C). Lightly oil the grates to prevent sticking.
  5. Grill the chicken bites for about 4 to 5 minutes per side until golden-brown and cooked through, reaching an internal temperature of 165°F (75°C).
  6. Remove from the grill, let rest, and serve chicken bites with creamy garlic sauce drizzled or on the side. Garnish with fresh parsley.
