Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 3 cloves of minced garlic and sauté for about 1 minute until fragrant.
  3. Add Italian seasoning, 1 cup of no added sugar marinara sauce, 1/4 cup of almond flour, and the cubed rotisserie chicken to the skillet. Stir together and let cook for about 5 minutes.
  4. Pour the chicken mixture into a greased 9"x13" casserole dish, spreading it evenly.
  5. Sprinkle a generous layer of grated Parmesan cheese and shredded mozzarella cheese over the chicken mixture.
  6. Top with crushed Parmesan crisps or pork rinds for crunch.
  7. Bake the casserole for 25-30 minutes until the cheese is melted and bubbling.
