  • 4 large Egg Yolks Should be at room temperature.
  • 1 cup Granulated Sugar Reduce for less sweetness.
  • 1 pinch Salt Enhances flavor.
  • 4 tbsp Unsalted Butter Cold for curd.
For the Cookies
  • 2 cups All-Purpose Flour Gluten-free flour can be used.
  • 1 tbsp Baking Powder
  • 1 tsp Sea Salt
  • 1 large Egg Yolk Adds moisture.
  • 1 tsp Vanilla Extract

Method
 

Step-by-Step Instructions
  1. Whisk together lemon juice, lemon zest, egg yolks, sugar, and salt in a saucepan over medium-low heat for 20-25 minutes until thick.
  2. Remove from heat and stir in cold butter until smooth. Chill until firm.
  3. Prepare cookie dough by whisking flour, baking powder, and salt. Cream butter and sugar, add yolk and vanilla.
  4. Combine with dry ingredients. Chill dough for 1 hour.
  5. Preheat oven to 350°F. Scoop dough into balls and indent centers. Bake for 9-10 minutes.
  6. Fill cookies with lemon curd and cool completely. Dust with powdered sugar if desired.
