Step-by-Step Instructions for Lemon Truffles
  1. Start by bringing the cream cheese or coconut butter and butter to room temperature for about 15 minutes.
  2. In a mixing bowl, combine the softened cream cheese, butter, powdered sugar, lemon zest, and, if using, food coloring. Using a hand mixer, beat the ingredients together on medium speed for about 2-3 minutes until creamy and well blended.
  3. Spread the lemon mixture into an even layer in a container or place it in the freezer for about 15-20 minutes to firm up slightly.
  4. After it has set, use a mini cookie scoop to scoop out small balls of the mixture, about 1 inch in diameter, and place them onto a parchment-lined plate.
  5. Refrigerate the formed truffles for about 30 to 60 minutes until they are firm enough to hold their shape.
  6. If desired, melt white chocolate chips in a microwave-safe bowl for about 30-60 seconds, stirring until smooth. Dip each chilled truffle in the melted chocolate.
