  • 1 tablespoon Lime Zest Fresh
For the Glaze
  • 1 cup Powdered Sugar
  • 1/4 cup Key Lime Juice
For the Whipped Topping
  • 1 cup Heavy Cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Beat the egg whites, 2 tablespoons of key lime juice, cream of tartar, salt, and lime zest in a large mixing bowl until stiff peaks form.
  3. Gradually incorporate granulated sugar into the whipped egg whites.
  4. Gently fold in the cake flour until just combined.
  5. Pour the batter into an ungreased angel food cake pan.
  6. Bake for 35 to 40 minutes, or until golden brown.
  7. Cool the cake in the pan upside down for about an hour.
  8. Prepare the glaze by whisking powdered sugar, 3 to 4 tablespoons of key lime juice, and lime zest until smooth.
  9. Poke holes in the cooled cake and drizzle the glaze on top.
  10. Whip the heavy cream until stiff peaks form for the topping.
