Ingredients
  

For the Chicken
  • 2 pieces Chicken breasts Substitute with chicken thighs for juiciness.
  • 2 tablespoons Olive oil
  • 2 tablespoons Honey Substitute with maple syrup for a vegan option.
  • 1 tablespoon Fresh lime juice
  • 1 tablespoon Lime zest
  • 2 cloves Garlic Minced.
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
For the Base
  • 2 cups Cooked rice White or brown; can substitute with cauliflower rice or quinoa.
For Assembly
  • 1 piece Avocado
  • 1/2 cup Red onion Chopped.
  • 1/4 cup Fresh cilantro Chopped.
Optional Garnishes
  • 2 pieces Lime wedges For serving.
  • 1/4 cup Additional honey-lime sauce For drizzling.

Method
 

Preparation
  1. Whisk together olive oil, honey, lime juice, lime zest, garlic, cumin, salt, and black pepper in a medium bowl for the marinade.
  2. Marinate chicken breasts in the mixture for at least 30 minutes in a resealable bag.
  3. Preheat grill or skillet to medium-high heat (approximately 400°F / 200°C).
  4. Cook marinated chicken for 6-7 minutes on each side until cooked through.
  5. Prepare your rice according to package instructions and fluff with a fork.
  6. Assemble stack with rice, avocado, red onion, and grilled chicken layers.
  7. Garnish with cilantro and drizzle with remaining marinade. Serve with lime wedges.
