  1. Cut the cauliflower into bite-sized florets and microwave on high for 5–8 minutes until tender.
  2. Optional: Blend the cooked cauliflower to achieve a light and fluffy consistency.
  3. Incorporate butter, garlic powder, and sour cream into the cauliflower mixture and mix until smooth.
  4. Mix the creamy cauliflower with most of the chives and half of the cheddar cheese, and season with salt and pepper.
  5. Spread the mixture into a greased baking dish and top with remaining cheddar cheese and cooked bacon.
  6. Microwave for about 2 minutes to melt the cheese or broil in the oven for 2–4 minutes until bubbly and golden brown.
