  • 4 fillets Mahi Mahi approximately 4-6 oz each, 1-inch thick

  • 1-2 teaspoons Dried Thyme adds earthy notes

  • 1 tablespoon Olive Oil for cooking
  • 1 tablespoon Butter for cooking
  • Cornstarch for thickening the sauce
  • Fresh Parsley finely chopped for garnish

Method
 

Cooking Steps
  1. Prepare the fish by bringing the mahi mahi fillets to room temperature, patting them dry, and seasoning with salt, pepper, and a spice rub.
  2. Heat a large stainless-steel pan over medium-high heat, add olive oil and butter, and let it heat until shimmering.
  3. Carefully add the seasoned mahi mahi fillets to the hot pan and cook for about 4 minutes until golden brown, then flip and cook for another 2-4 minutes.
  4. Remove the cooked mahi mahi and tent with foil to keep warm while preparing the sauce in the same pan.
  5. Sauté minced shallots and garlic in the pan for 2-3 minutes until fragrant and translucent.
  6. Whisk in chicken broth and lemon juice, bring to a simmer, then add heavy cream, thyme, and season with salt and pepper.
  7. Return the mahi mahi to the sauce, spoon sauce over, and let simmer for an additional minute.
  8. Plate the mahi mahi with sauce on top and enjoy.
