  • 1 box regular fruit pectin Avoid low-sugar pectin.
  • 1/2 teaspoon baking soda Balances acidity during cooking.
  • 1/2 cup filtered water Needed to dissolve baking soda and pectin.
For the Sour Coating
  • 1/4 cup granulated sugar Used for coating.
  • 1/2 teaspoon powdered citric acid Adds a delightful sour punch.

Method
 

Gummy Preparation
  1. Prepare your silicone gummy molds or a 9x9 pan lined with parchment paper.
  2. In a medium saucepan, combine pureed strawberries, granulated sugar, and corn syrup. Heat over medium heat while stirring until it reaches a rolling boil.
  3. In a separate saucepan, mix fruit pectin with baking soda and filtered water. Stir until foamy and simmer for 2 minutes.
  4. Combine the pectin mixture with the boiling strawberry mixture. Monitor temperature with a candy thermometer until it reaches 230°F.
  5. Remove from heat and stir in powdered citric acid. Mix thoroughly.
  6. Pour the mixture into prepared molds and allow cooling at room temperature for about 2 hours or overnight.
  7. Once set, remove gummies from molds and roll in a mixture of granulated sugar and powdered citric acid.
  8. Store in an airtight container at room temperature or refrigerate.
