Preparation
- In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, dried oregano, ground cumin, smoked paprika, salt, and pepper. Add the chicken thighs, coat well, cover, and marinate for at least one hour, ideally overnight.
- Prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and salt. Stir until creamy, cover, and refrigerate for at least 30 minutes.
- Preheat your grill or grill pan to medium-high heat. Grill the marinated chicken thighs for 5-7 minutes on each side until fully cooked. Let them rest before slicing.
- Warm the pita breads in a pan or microwave. Layer sliced chicken, tzatziki, cherry tomatoes, red onion, lettuce, and feta cheese in each pita.
- Serve immediately garnished with fresh parsley and additional tzatziki on the side.
