Ingredients
  

For the Chicken Marinade
  • 4 pieces Chicken Thighs A great choice for juiciness and flavor.
  • 2 tablespoons Olive Oil Substitute with avocado oil if desired.
  • 2 tablespoons Red Wine Vinegar Use apple cider vinegar if in a pinch.
  • 3 cloves Garlic Fresh cloves work best.
  • 2 teaspoons Dried Oregano Substitute with thyme if necessary.
  • 1 teaspoon Ground Cumin Coriander can replace it.
  • 1 teaspoon Smoked Paprika Sweet paprika is a milder alternative.

For Tzatziki Sauce
  • 1 cup Greek Yogurt Opt for plant-based yogurt if dairy-free.
  • 1 medium Cucumber Grated and squeezed to remove excess water.
  • 2 tablespoons Fresh Dill Dried dill works too, just use less.
  • 1 tablespoon Lemon Juice Lime juice can be a substitute.

For Assembling the Gyros
  • 4 pieces Pita Breads Flatbreads can also be used.
  • 1 cup Cherry Tomatoes Substitute with diced regular tomatoes if needed.
  • 1 medium Red Onion Sweet onions can be milder.
  • 1 cup Lettuce Any leafy greens work well.
  • 1/2 cup Feta Cheese Skip for a dairy-free option.
  • 2 tablespoons Fresh Parsley Optional garnish.

Method
 

Preparation
  1. In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, dried oregano, ground cumin, smoked paprika, salt, and pepper. Add the chicken thighs, coat well, cover, and marinate for at least one hour, ideally overnight.
  2. Prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and salt. Stir until creamy, cover, and refrigerate for at least 30 minutes.
  3. Preheat your grill or grill pan to medium-high heat. Grill the marinated chicken thighs for 5-7 minutes on each side until fully cooked. Let them rest before slicing.
  4. Warm the pita breads in a pan or microwave. Layer sliced chicken, tzatziki, cherry tomatoes, red onion, lettuce, and feta cheese in each pita.
  5. Serve immediately garnished with fresh parsley and additional tzatziki on the side.
