Step-by-Step Instructions
  1. Drain chickpeas, rinse thoroughly, and let dry for 5–10 minutes.
  2. Finely chop red onion, halve cherry tomatoes, and dice cucumber.

  4. In a large bowl, combine chickpeas, vegetables, feta, parsley, and mint.
  5. Drizzle dressing over salad and toss to coat. Optionally chill before serving.
