For the Quesadillas
  • 4 pieces Tortillas whole grain or gluten-free
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Feta Cheese crumbled
  • 2 cups Fresh Spinach chopped
  • 1 medium Tomato diced
  • 1/2 medium Red Onion sliced
  • to taste Black Pepper freshly ground
  • 1 tablespoon Olive Oil for frying

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine shredded mozzarella, crumbled feta, chopped fresh spinach, diced tomato, and sliced red onion. Season with black pepper. Stir until well combined.
  2. Lay a tortilla flat and spoon one-fourth of the filling onto half of it. Fold the tortilla over to create a half-moon shape.
  3. Heat olive oil in a large skillet over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes until golden-brown.
  4. Flip the quesadilla and cook for another 3-4 minutes until both sides are crispy and the cheese has melted.
  5. Remove from skillet, let cool for a minute, and slice into wedges. Serve warm.
