Step‑by‑Step Instructions
  1. Prepare Marinade: In a food processor, combine fresh garlic, jalapeño pepper, lime juice, coriander, cumin, paprika, oregano, salt, and pepper. Blend until smooth.
  2. Marinate Chicken: Dice chicken thighs, coat them with the marinade, cover and refrigerate for at least an hour.
  3. Soak Skewers: If using wooden skewers, soak them in warm water for about 30 minutes.
  4. Assemble Skewers: Thread marinated chicken pieces with bell peppers and onion onto the soaked skewers.
  5. Cook: Preheat your grill to medium-high. Grill skewers for about 15 minutes, turning frequently; if baking, cook at 220°C for 25-30 minutes.
  6. Serve: Let skewers rest for a couple of minutes before serving hot.
