Method
 

Step-By-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a loaf pan or baking dish.
  2. In a mixing bowl, combine ground beef, salsa, cheddar, green chiles, taco seasoning, tortilla chips, eggs, onion, garlic, salt, and pepper. Mix until just combined.
  3. Transfer the mixture to the prepared pan and shape into a loaf.
  4. Bake uncovered for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
  5. In the last 5 minutes, add extra salsa or cheese on top if desired.
  6. Allow the meatloaf to rest for 10 minutes before slicing and serving.
