Step-by-Step Instructions for Moroccan Potato Tagine
- In a large pot or tagine, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped yellow onion and 2 minced garlic cloves, sautéing them for about 3–5 minutes until they become soft and translucent.
- Next, toss in 2 diced potatoes, 2 sliced carrots, and 1 chopped red bell pepper. Stir everything together and cook for another 5 minutes.
- Sprinkle in 1 teaspoon each of cumin, coriander, paprika, and turmeric, along with salt and black pepper to taste. Mix everything thoroughly for about 1–2 minutes.
- Pour in 2 cups of vegetable broth and add 1 can of drained chickpeas, stirring to combine all the ingredients.
- Cover the pot with a lid and reduce the heat to low. Let the Moroccan Potato Tagine simmer for 30–40 minutes.
