  • 2 cups potatoes diced, can substitute with sweet potatoes
  • 2 cups carrots sliced, can substitute with parsnips
  • 1 medium red bell pepper chopped, can substitute with green bell pepper
  • 1 medium yellow onion chopped, can substitute with shallots
  • 2 cloves garlic minced, can substitute with garlic powder
  • 1 can chickpeas drained, can substitute with any canned beans
  • 2 cups vegetable broth can use water or chicken broth for different taste
  • 2 tablespoons olive oil can substitute with coconut oil
For the Spices
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • salt to taste
  • black pepper to taste
For Garnish
  • 1/4 cup fresh cilantro or parsley for garnish, can substitute with mint
  • 1 medium lemon cut into wedges for serving

Method
 

Step-by-Step Instructions for Moroccan Potato Tagine
  1. In a large pot or tagine, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped yellow onion and 2 minced garlic cloves, sautéing them for about 3–5 minutes until they become soft and translucent.
  2. Next, toss in 2 diced potatoes, 2 sliced carrots, and 1 chopped red bell pepper. Stir everything together and cook for another 5 minutes.
  3. Sprinkle in 1 teaspoon each of cumin, coriander, paprika, and turmeric, along with salt and black pepper to taste. Mix everything thoroughly for about 1–2 minutes.
  4. Pour in 2 cups of vegetable broth and add 1 can of drained chickpeas, stirring to combine all the ingredients.
  5. Cover the pot with a lid and reduce the heat to low. Let the Moroccan Potato Tagine simmer for 30–40 minutes.
  6. Once done, taste the tagine and adjust the seasoning as necessary.
  7. Before serving, garnish your Moroccan Potato Tagine with a handful of chopped fresh cilantro or parsley and squeeze some lemon wedges over the top.
