Step-by-Step Instructions
  1. Cook the frozen riced cauliflower according to package instructions, usually in the microwave for about 5-6 minutes until tender.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until they soften.
  3. Incorporate the sliced mushrooms and sauté for 5 minutes until they turn golden brown.
  4. Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  5. Stir in the cooked cauliflower rice and 2 tablespoons of soy sauce or coconut aminos, cooking for 2-3 minutes.
  6. Fold in the fresh spinach, stirring gently until it wilts, about 1-2 minutes.
