Instructions
- Line an 8-inch or 9-inch square baking dish with parchment paper, leaving overhang for easy lifting.
- In a large saucepan over medium heat, melt ½ cup of butter with 1 cup of brown sugar, stirring for 3-4 minutes until smooth.
- Stir in 1 teaspoon of vanilla extract, then add 2 cups of rolled oats and cook over low heat for another 3-4 minutes.
- Remove half of the oat mixture and press it into the bottom of the prepared baking dish.
- In a microwave-safe bowl, combine 1 cup of chocolate chips and ¾ cup of peanut butter. Microwave in 30-second intervals until melted and smooth.
- Pour the melted chocolate and peanut butter mixture over the oat base, spreading evenly.
- Top with the remaining oat mixture, pressing down gently. Drizzle leftover chocolate over the top if desired.
- Refrigerate for 2-3 hours or overnight until set.
- Remove from dish and cut into squares. Allow to reach room temperature before serving.
