No-Bake Summer Berry and Peach Cheesecake Recipe Delight

Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 2 cups cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh peaches sliced
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • ¼ cup peach preserves

Method
 

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Refrigerate for 30 minutes to set.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  4. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  7. Spread the cream cheese mixture evenly over the chilled crust.
  8. Arrange the sliced peaches and mixed berries on top of the cheesecake.
  9. Drizzle the peach preserves over the fruit.
  10. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  11. To serve, carefully remove the sides of the springform pan. Slice and enjoy!
