- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Unroll a sheet of phyllo dough on a clean surface, keeping remaining sheets covered with a damp towel. Brush with olive oil.
- Layer two more phyllo sheets on top, brushing each with oil. Cut into strips approximately 3 inches wide.
- Place a piece of feta cheese at one end of each strip, fold the sides inward, and roll tightly. Repeat until all feta is used.
- Brush the tops of each roll with olive oil.
- Bake the rolls for 15 to 20 minutes until golden brown, turning halfway through.
- Warm the chili honey in a small saucepan over low heat while the rolls bake.
- Drizzle the warm chili honey over the baked rolls before serving.
