Ingredients
  

  • 1 head of cauliflower cut into bite-sized florets
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs preferably Italian seasoned
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Cooking spray or olive oil for drizzling

Method
 

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the eggs, garlic powder, onion powder, salt, black pepper, and paprika.
  3. Add the cauliflower florets to the bowl and toss until they are well coated with the egg mixture.
  4. In a separate bowl, combine the breadcrumbs and Parmesan cheese.
  5. Take each cauliflower floret, allowing any excess egg mixture to drip off, and then roll it in the breadcrumb and cheese mixture until fully coated. Place the coated florets on the prepared baking sheet.
  6. Spray or drizzle the cauliflower bites with cooking spray or olive oil to help them crisp up in the oven.
  7. Bake for 20-25 minutes, or until the bites are golden brown and crispy. For extra crispiness, broil for an additional 2-3 minutes at the end.
  8. Remove from the oven and let cool for a few minutes before serving.
