Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line the baking pan with parchment paper and apply cooking spray.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until coated and damp, then press into the pan.
  3. Beat together cream cheese, sugar, sour cream, and vanilla extract until smooth and creamy.
  4. Gradually add the eggs one at a time, mixing on low speed until well combined.
  5. Pour the filling over the crust and bake for 25-35 minutes until slightly jiggly in the center.
  6. Cool at room temperature for 1-2 hours, then chill in the refrigerator for 3-4 hours.
  7. For the topping, simmer strawberries, sugar, water, lemon juice, and cornstarch until thickened (about 5-7 minutes).
  8. Slice the cheesecake bars, top with strawberry sauce, and drizzle with melted white chocolate before serving.
