Step-by-Step Instructions
  1. Dice 2 cups of fresh pineapple into bite-sized pieces.
  2. Chop 1 large English cucumber into 1/2-inch pieces.
  3. Finely slice 1/4 cup of red onion.
  4. Mince half a jalapeño, adjusting the heat to your preference.
  5. Chop 1/4 cup of fresh cilantro.
  6. In a mixing bowl, toss together the diced pineapple, cucumber, red onion, minced jalapeño, and chopped cilantro.
  7. In a separate bowl, whisk together 2 limes' juice, 3 tablespoons of olive oil, and 1 tablespoon of honey until emulsified.
